Organic Peach Bellini, A Recipe To Make At Home Using Leftover Champagne/Sparkling Wine



So New Year’s day came around and everyone was pretty much sugared out from Christmas, so when the organic champagne (sparkling wine) toast to the new year came, sips were taken and an almost full bottle of bubbly went back in the refrigerator.

What to do with the leftover champagne? Hmm…It was either going to be a mimosa (orange juice with champagne) or a bellini (peaches and champagne).  Since I didn’t want to drag out the juicer I went with bellini, plus I’d never made one on my own before.

Here’s what I used:

1. Organic Freeze Dried Peaches- Amount used is dependant on the amount of leftover sparkling wine/champagne.  I used about 2 peaches worth, or a generous handful.

2. Organic Vegan Sugar: Pick your favorite kind.

So what I did was use a coffee grinder that I reserve only for grinding spices and powdered the freeze dried peaches up.Although this could probably be achieved with other kitchen devices such as a blender.

Then I got a double boiler and coated the bottom of the top pot with sugar, about the same visual amount as the peach powder, but use what you need to taste.  You should probably use more if  you prefer a sweeter version. I then added just a bit of water to moisten everything together and used my whisk over a med/low double boiler heat until the mixture of peach powder and sugar was saturated and similar to a nice smooth syrup.

Now here is where you have a few options.

What I did was simply pour the champagne into a pitcher and add the new peach sugar syrup mixture, stir with whisk and serve. Done, Enjoy!

Or, this is the point where you can make a frozen version and add the entire amount to a blender with ice.

Also, this is the point where you could add extra liquors, or fresh peaches if you have them on hand.

I didn’t.  As it is winter and snowing, I wasn’t interested in a frozen drink and had no frozen or fresh peaches on hand. Overall I’d have to say this recipe worked out pretty well 🙂
